Under the Sea with Blue Straws and Cupcake Wrappers – Dolce Designs

Now, we want to share all the photo details of the event and a special interview with the designer, Jesi of Dolce Designs. You’ll learn about how she got started in this line of business, her tips to folks getting married and favorite cupcake flavors. Enjoy!


Tell us about the event, who was it for and how did the theme come together?

This was a birthday party for a tween girl who adores the ocean and the color blue. I created a “blue room” by hanging up blue curtains in the window and a curtain of tri-colored streamers in the arch separating the party room from the next room in the house. The circle streamers and balloons were there as “bubbles”, and the fishing net and sea shells scattered throughout further enhanced the oceanic atmosphere.

The decor as well as the cake were kept simple and “grown up”, and I stayed as far as possible from the cartoony ocean theme usually seen for little boys. I wanted this to be a girly ocean theme, and the birthday girl love it!

 Tell us how you got started in the event planning business? 

I’ve been baking and decorating cakes for years, and I’ve always loved planning my family’s birthday parties…so it was natural for me to go beyond just making the cake  to designing the entire event. I’ve always gone all out with birthdays even if we had just a handful of guests. I want the image of mom slaving away in the kitchen baking countless cupcakes and cakepops engraved in their little minds.

About two years ago a friend of mine showed me a picture of a simple but beautiful dessert table, and I knew it was something I would love doing. I started making decorations that same day and couldn’t stop. I spent a week making fans, pom poms, banners, you name it. And this was before I even knew about Pinterest! (back in the day when you needed an invitation to join, remember?). Now the inspiration found online from other designers is endless!

We noticed you have a lot of cupcakes, cakes and macaroons in your displays. Do you bake all your own goodies? 

I sure do! I started making cakes and cupcakes years ago, then when cakepops first came out I thought they were adorable and followed a tutorial on the Pioneer Woman’s website (love her). Once I got the basics down I stared experimenting with my own recipes and flavors. The frosted sugar cookies followed, and lastly, I just HAD to master zee Fwench macaron. It took me three tries but I’m glad I looked failure in the eye and kept on piping. They are always a big hit.

The neat thing is, all of my baked goods can be converted to gluten and/or dairy free for those on a special diet. Over the years after being disappointed with gluten free recipes I’d find online, and the sugar laden GF cookies I’d buy at the store, I just decided to develop my own. Most people are none the wiser. I usually wait until they finish something to tell them it’s gluten free and they can’t believe it.

What are your best selling event theme?

By far everyone loves vintage/country chic. Which is great considering I live 5 min away from a huge antique mall. I want to be dropped off there and left to shop (with no children next to me asking “what’s THIS for?” every five seconds) for an entire week. It is my favorite style as well.

What is one tip you would give to a bride planning her wedding dessert 

My husband and I eloped 12 years ago and didn’t tell anyone we were getting married. And even though it was romantic, I didn’t think at the time that years later, I’d wish I had a big wedding with a beautiful wedding gown and a big cake. So my advise would be, go for the wedding of your dreams! Whether you want a grand dessert table with lots of gorgeous desserts or you want simple chic with just a few delicious goodies, it’s about what YOU want. Years later you’ll look at the photos and remember everything was exactly how you wanted it.

What’s your favorite cupcake flavor? 

My favorite cupcake flavor is anything citrusy (made with real orange and lemon peel please!), and if it has warm Italian meringue on top, even better! Reminds me of Lemon meringue pie. But of course rich chocolate is a close second.

Just for fun; what is your favorite Bella Cupcake Couture cupcake wrapper design?

I love all the cupcake wrappers! But my favorite would have to be the white/gold damask and the pink/black damask. They are adorable!

Halloween Care Package for the Troops with Popcorn Ball Recipe

is a Deployment Care Package Program sponsored by Betsy Eves of, the wife of SGT David Eves.  Each month, a blogger from the either the USA or Europe will create a care package with 2nd Platoon in mind.  It will be decorated with a fun theme and will be filled with lots of goodies!

Popcorn Ball Recipe and Goodie Bags
We choose one of our favorite times of the year to participate in this program; October. With Halloween almost here, our care package was designed with the childhood chant of “Trick or Treat, Smell my Feet, Give Us Something Good to Eat” in mind. Our theme was for soldiers with a sweet tooth, a love for cozy toes and for the kid in all of us who adores this Spook-tacular holiday. We enclosed goodie bags for each soldier filled with candy and toys, brand new white socks, popcorn balls (see popcorn ball recipe below) and more.

Care Package for the Troops

(including glow in the dark spiders, parachuting skeletons and
vampire fangs for a little dress up fun).

– Peanut Butter Taffy (sealed in zip lock in case of allergies)

The package was easy to make with a trip to our local party supply store and Target. We picked up festive bags to fill with the goodies and a variety of candies that wouldn’t melt in transit. It can take approximately 3 weeks to get to the troops so we wanted to ensure we sent items that could sustain the journey. We found jolly ranchers, gummy lifesavers, laffy taffy, nerds, skittles and more.

We also thought some fun little toys would be good to add so we found some spooky glow in the dark spiders and vampire fangs. But our favorite were the little parachuting skeletons. Growing up I always remember how fun the little parachute men were so thought they would be good fun. We also wanted something useful and thought white socks for the soldiers would be handy out in the dessert and went nicely (and a bit tongue in cheek) with our “Trick or Treat, Smell our Feet” theme. We also added a pencil that was decorated with Halloween colors and themes. We rolled each pencil into the bag top and sealed it with tape so that none of the contents would fall out in transport.

Popcorn Balls

Popcorn Ball Recipe

2 cups sugar
1 1/3 cups water
1/2 cup light corn syrup
1 teaspoon white vinegar
1/2 teaspoon salt
1 teaspoon vanilla extract
18 cups popped corn

Popcorn Popcorn Ball ingredientsCandy Thermometer fo rPopcorn Balls

In a medium saucepan, combine sugar, water, syrup, vinegar, and salt. Cook over high heat until mixture reaches 255 degrees F (hard-ball stage) on a candy thermometer. Stir in vanilla.
Popcorn Ball Mix
Pour over popped corn, tossing gently to coat. When mixture is cool enough to handle, press popcorn into 3-inch balls with lightly greased hands. Cool completely on waxed paper.

Child Back to School Cupcake Wrapper Artists

Meet Luke & Brooke! They are our closest friends little ones who just happened to be visiting in Seattle this last week from Austin, TX. We were excited to see them and had such fun baking cupcakes and decorating back to school cupcake wrappers with them.

Apple Spice Cupcake Recipe

Spiced Apple Cupcakes with Cinnamon Cream Cheese Frosting
Cupcake adapted from Tracey’s Culinary Adventure’s , frosting adapted from Martha Stewart
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1 cup sugar
2 large eggs plus 1 large egg yolk, at room temperature
1/2 teaspoon vanilla extract
3 1/2 tablespoons boiled cider
1/2 cup whole milk, at room temperature

1/2 cup (1 stick) unsalted butter, at room temperature
6 oz cream cheese (reduced fat is fine), at room temperature
2 cups confectioners’ sugar, sifted
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract

Preheat oven to 325 F. Line cupcake pan with paper liners.

In a medium bowl, whisk the flour, baking powder, cinnamon, and salt until combined. Add the butter and sugar to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium speed until very light and fluffy, about 5 minutes. Add the eggs and then the egg yolk, 1 at a time, and beat well after each addition. Mix in the vanilla extract. In a measuring cup, whisk the milk and boiled cider together. With the mixer on low, alternately add the dry ingredients in 3 additions and the milk/cider combo in 2, beginning and ending with the dry ingredients and beating just until the batter is combined.

Divide the batter among the liners, filling each about 2/3 to 3/4 full. Bake for about 25 minutes, or until a toothpick inserted in the center comes out clean. Transfer the pan to a wire rack and let the cupcakes cool for just a few minutes before removing them to the racks to cool completely.

To make the frosting: Add the butter and cream cheese to the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until light and fluffy, about 2-3 minutes. With the mixer on low, gradually add the confectioners’ sugar (stopping to scrape down the sides of the bowl once or twice) until completely incorporated. Add the cinnamon and vanilla and mix until combined.

To assemble the cupcakes: Transfer the frosting to a pastry bag fitted with a tip. Pipe frosting into a swirl on each cupcake. Drizzle with additional boiled cider and/or garnish with a caramel square, if desired.

Makes 12-14 cupcakes

Haute Cakes & Zebra Cupcake Wrappers

What do haute cupcakes and Zebra Cupcake Wrappers have in common? Jessie of Jessie’s Haute Cakes!! We’re excited to share our first cupcake baker interview with a baker who has there Cottage Foods License. She’s a total sweet heart! Hear about her journey into the Haute Cupcake world!

  1.    How long have you been baking cupcakes?
I have been baking for about 3 ½ years now. I had been on a mission to find a delicious cupcake and after trying several places that seemed to get great reviews, I wasn’t impressed with any of them. So I set out to make my own. It took a lot of trial and error, considering I was not a baker to begin with, but I soon realized that I had a real knack for it and truly enjoyed making them.

2.    When did you decide you wanted to start your own cupcake business?
My first cupcake was a Marbled Malt Ball for my daughter’s teacher and they were a huge success. It wasn’t long before they were being requested for every event and party at school, and I realized that I really had something! So, I started looking into different options for starting a business. I heard about the new Cottage Foods law and decided that this was the way for me to go. It took me a few months to get all of the paperwork put together, but I am pleased to say that I passed with flying colors and am looking forward to seeing where this journey takes me!

3.    What is the most memorable event you’ve baked for?
I have had the opportunity to take part in many fun events, including a fashion show, the recent Seattle Underground Markets, craft fairs and even more recently, the Grand Opening Party for OldSchool PinUps and Seattle Retro Photography. I love seeing the smiles that people get when they see my cupcakes, or taste them for the first time; it is truly an incredible experience. It certainly makes all of the hard work and effort put into each one worth every second.

 4.    What is your favorite cupcake flavor?
I actually have several that I love, but if I had to narrow it down a bit a few of my top favorites would include Chocolate Salted Caramel, Lemon Coconut and Buttermilk Maple Bacon!zebra cupcake wrappers


5.    Tell us about the recent special occasion where you used Bella Cupcake Couture cupcake wrappers?
I had the opportunity to use Bella Cupcake Couture zebra cupcake wrappers at my daughter’s 11th birthday party. It was a pink and zebra rockstar themed party. I made custom fondant toppers with guitars, microphones, stars and roses for each of the cupcakes. The zebra print wrappers worked perfectly to tie everything together!zebra cupcake wrappers

6.    Do you have a favorite Bella Cupcake Couture cupcake wrapper?
I love all of your cupcake wrappers! There are so many beautiful designs and colors to choose from, and the quality is excellent. I’m looking forward to many events in the future when I can use even more of them, and offer them as an option on all of my custom orders!

7.     Anything else exciting you’d like to add?
I am pleased to announce that I will be at several upcoming Farmers Markets this summer! The dates are posted on my Facebook page, and I will be updating my website soon as well. I look forward to seeing many happy, smiling faces enjoying my tasty cupcakes at the North Bend and Sammamish Farmers Markets that I will be attending full time. I will also be at the Juanita and Shoreline Farmers Markets part time this season!

Share the Cupcake Love

Do you love cupcakes? (Well of course you do or else probably wouldn’t be on this blog). Do you love cupcakes for a cause? Then you’re going to love this event.

Recently in Scottsdale Arizona there was an event called Cupcake Love In. This event was put on by the event founder, Kelly Garcia of Butter & Me and honors their local cupcake community and businesses and supports a local charity called Project H3 Vets

Our owner, Carrie Middlemiss of Bella Cupcake Couture was invited to be a cupcake competition judge. Yes dozens of cupcakes were consumed to pick the very best by some of the top experts in the cupcake field.

On today’s blog post Carrie will share the story of her trip, the people she met, and the cupcakes she ate. Enjoy!

Hello Bella Cupcake Couture fans! Thank you for reading today’s post and for making our cupcake wrappers a part of all your special events. I’m very excited to share all the sweet details of what happened on my trip. I captured many of the moments with photos  and video on my iPhone. I hope you enjoy!

First the trip started off traveling to Scottsdale Arizona from Seattle, WA. I brought my little dog Baxter ( a yorkie-maltese) who sat calmly all the way for the two and a half hour journey.

We arrived a day early for a pre-party hosted by the owner Kelly of Butter & Me. Kelly who’s also the event creator of Cupcake Love In had a nice display of cupcakes and other sweet treats for all their guests.

Guests included Rachel of Cupcakes Take the Cake, who was also celebrating her birthday that night. Here’s a video of us singing happy birthday to her.

Also a sweet surprise guest was Monti Carlo from Master Chef was there. My husband and I are a huge fan of Master Chef and we’re always cheering Monti on so it was so nice to meet her in person. She’s an absolute sweetheart.

That night Rachel and I met up at The House Brasserie (a foodies delight) to sample some of the local cuisine and chat cupcakes.

The next day started with a room full of cupcakes; literally thousands.
I walked around the room to visit all the cupcake vendors and check out their petite treats.

Even though I was about to consume large amounts of cupcakes for the competition I couldn’t help myself but to try Bourbon Steaks “Figgy Piggy” cupcake. And I’m so happy I did because by the end of the event they were out and it was seriously one of the best savory cupcakes I’ve had.

The first thing we judge was best use of secret ingredient. Can you guess what it is? Hint pop pop pop

Here was the winner by Santa Barbara Catering. I devoured this cupcake and the brittle was delicious.

Next was best classic cupcake

The winner again was Santa Barbara catering for this strawberry lime filled cupcake.

Here where are fabulous volunteers who made the day extra special. Kelly on the right is the owner butter and me and the creator of this cupcake cause event.

Next was best tasting frosting.

And the winner was Gigi’s Cupcakes for their chocolate chip cupcake. Perfectly presented!

And here’s me and Chef Amee Hoge, another judge doing the grueling hard work of tasting cupcakes.

Lastly was the savory cupcake. And this one will blow your mind.
It was foie gras with sweet potato by Bourbon Steak. The combinations worked very well together.

There was also a snap booth at the event which Rachel of Cupcakes Take the Cake and I had to test out

There was also face painting for the kids…..ummm of all ages.

We ended the day with lunch with the creators of Cupcake Love In and Rachel of Cupcakes Take the Cake.
It was a sweet day!

Sweet Success- The 2011 Results

What an amazing, sweet-filled day we had for the 2nd Annual Cupcake Camp Seattle event. Bella Cupcake Couture (event organizer)  is so proud of the amazing outcome; we had nearly 800 people attend, 25+ vendors sharing their goods (sweet, stylish and sassy), 5,000 cupcakes to sample and the greatest success was raising $7,000 with proceeds going to the Hope Heart Institute.

We also felt soooo lucky with the weather we had. It was a beautiful sunshiny day at (which we know is rare in Seattle the past several months). Everyone enjoyed there cupcakes along the  water on the patio at The Canal.

There are so many folks to thank for helping to pull together this fabulous event. First is definitely The Canal, a Jewel Hospitality venue for providing the beautiful space for this fabulous event.

Interview with Candace Nelson of Sprinkles- Take Two

Today I was invited to interview Candace Nelson again regarding the new season premiere of Cupcake Wars. Candace is the founder and pastry chef of Sprinkles Cupcakes, the world’s first cupcake bakery.

Here are a few questions asked and her answers:
Favorite cupcake creation currently?: Eggnog; it really adds something unique to the cupcake and frosting experience.

What will be new and exciting on the next Cupcake Wars series?
A lot of Vegan, Gluten-free and non-allergy focused bakers. Some did impressively well and others not so good.

What is the must see episode of the season?
Candace says we should definitely see the Champions and Redemption Show. There is a lot of competition and drama.

Where and what will Candace be doing for the first episode of Cupcake Wars?
Curled up in front of a fireplace with eggnog and a cupcake.

3 Easy Tips to Throw An Amazing Bridal Shower

Today we have a special guest blogger post; Kimm M. We met Kim originally at the Seattle Cupcake Camp that Bella Cupcake Couture organized earlier this year. Kimm submitted cupcakes for the competition and we were wowed by her entry for “Most Unique Ingredient”; a Kimm-chi Cupcake. Very clever!

Here is Kimm’s bio (below) and today she will share her insight into planning an amazing bridal shower.

My name is Kimm and I have a deep passion for baking and creating! I am the current Pastry Chef for Spitfire Restaurant and do my own dessert catering. I have been cooking and baking professionally for about 6 years. I have baked cupcakes at Seattle’s first annual Cupcake Camp, started work at 2am to bake artistian bread, made thousands of petit fours, went to Florida for a National Pie Contest, help cater banquets for Microsoft employees, and baked batches, and batches, of cookies. My true passion for baking comes from people who enjoy what I bake and create.

How to Throw An Amazing Bridal Shower: 3 Easy Tips!

Blue skies, fresh flowers, white dresses, Seattle’s sunshine…that means wedding season! If you’re the lucky Maid of Honor, throwing a great bridal shower, can be easy, fun, and simple. Here are three easy steps to make your bridal shower a success:

1) Do not be afraid to ask for help! When I was planning my cousin’s, Lindsey, bridal shower, I gather other people’s strengths. My wonderful sister-in-law, Meghan, used her design skills to create extraordinary invitation using Lindsey’s wedding colors. My obsessively organized mother kept a detailed list of the rsvp’s and guest list. I planned the menu (of course!) and catered/hosted the event. Building a great team will insure many compliments on your shower.

2) Organize and WRITE down a schedule! Write (yes, pen and paper) down what you want to accomplish one month, one week, and three days before the shower. Make a clear checklist. Also, note the shower usually takes places 2-3 months before the wedding happens. Send out invitations approx. 2 months before the bridal shower happens to make sure many loved ones can make it!

3) Make the food E-Z! If you cannot cater the bridal shower you’re hosting…like I did, then hire someone to do it! Either order large party platters from a trusted grocery store or find someone! The caterer does not need to be a professional, maybe a close friend, co-workers, or family member with great and delicious cooking skills. Ask around! The food should be light and easy: think salads, fruit/crudités trays, and two-bite appetizers. Have three drink selections: wine, water, and juice (or another non-alcoholic beverage). And of course, the dessert can be made easy by simply baking (which I love to do) the brides favorite cupcakes (or if you prefer, buying from a local bakery). Then add a bit of Bella Cupcake Couture and voila, you have the piece de resistance for your table centerpiece. The bride and her guests will appreciate all the little touches.

Remember: A bridal shower should include the bride’s close friends and family. It should be her special party and be filled with great memories, food and love! Happy Baking! Kimm

Interview with Candace Nelson of Sprinkles

Last week we were so excited to get an invitation to interview Candace Nelson, the founder and pastry chef of Sprinkles Cupcakes, the world’s first cupcake bakery. Learn more about Candace HERE.

The conference call included a select few cupcake bakers, bloggers, cupcake lovers and what seemed like a Who’s who of the cupcake world; including CakeSpy, My Baking Addiction, The Cupcake Project, Serious Eats, The Cupcake Caldron, of course ourselves; Bella Cupcake Couture and more.

There are so many wonderful Q&A’s:

  • Have you ever been starstruck by a celebrity?”
  • Whats the most disgusting cupcake you’ve tried?”

On last night’s show you highlighted savory ingredients, and the salmon cupcake looked absolutely amazing, I wish I could try it. I’ve started to see this trend more and more, is there a favorite savory ingredient you like best? And have you ever done wine pairings for cupcakes?

Candace: People have asked us to do wine pairings at Sprinkles all the time, and unfortunately we don’t have our liquor license, but it sounds delicious to me! [laughs] And your question was about savory cupcakes in general? Because it certainly is a trend in the industry towards more savory cupcakes, and we saw it last night with salmon and bacon, and we’ll continue to see it throughout the season. I’ve been kind of slow to do that at Sprinkles, but we did just come out a salty caramel made with sea salt, and it was an overwhelming hit. I really think people are craving that right now. They’re kind of like, they’ve got their sweet, plenty of options in the sweet department, and they want something with a little bite to it. I think there’s definitely a lot of that interest going on.

Candace serves as a permanent judge of the new Cupcake Wars series (Tuesdays at 9pm/8c). Cupcake Wars is cupcake vs. cupcake in Food Network’s tastiest competition yet!


Each week on Cupcake Wars, four of the country’s top cupcake bakers face off in three elimination challenges until only one decorator remains. The sweet prize: $10,000 and the opportunity to showcase their cupcakes at the winning gig. Whether a special Ace of Cakes anniversary celebration, a star-studded magazine party or an A-list celebrity golf tournament, these Cupcakes Wars really heat up. Candace Nelson (owner of Sprinkles Cupcakes) and Florian Bellanger (chef and co-owner of online macaroon company MadMac) serve as permanent judges with a third rotating judge each week, and Justin Willman hosts.


If you watched the first episode, you know we have some “sweet & savory” adventures ahead of us on the show. The premier showcased a savory selection of ingredients which many of the contestants were up for the challenge.

However it was “Sweet.” victory for Hollis Wilder owner of Sweet! by Good Golly Miss Molly. She sure knows how to put on a show. She created a salmon and lemon-scented cake concoction which many thought would be an improbable concept. However the judges thought it was divine! Way to go Hollis! And Thank You Candace for the wonderful opportunity to speak with you and sharing your insights. You’re an inspiration!

Baked with LOVE and a lot of (Hope) Heart!

Bella Cupcake Couture owes the biggest thank you for the success of our first annual CupcakeCamp Seattle has to go to all the fabulous bakers who participated in the first annual CupcakeCamp Seattle.
