Blueberry Lemon Cupcake with Lemon Zest Cream Cheese Frosting
Cupcakes (makes 6):
1 cup Cake Flour
¼ teaspoon baking soda
¼ teaspoon sea salt
1 large egg
1/4 cup sugar (or honey)
1/4 cup milk
2 teaspoons finely grated lemon zest
1/2 cup fresh blueberries
Preheat the oven to 350ºF. Line 6 cups of a muffin pan with baking liners. In a large bowl, whisk together the almond flour, baking soda, and salt. Separately whisk together the egg, honey, and lemon zest. Pour the wet ingredients into the flour mixture and stir to combine. Fold in the berries.
Divide the batter among the lined muffin cups. Bake for 15-18 minutes until golden brown and a toothpick inserted into a cupcake comes out clean. Cool completely. Note: I noticed the cupcake was a bit more dense like a muffin than I had hoped. Next time we make these we will add either butter/oil (was trying to be healthy on this recipe) or an additional egg. Both will help make them lighter and moister.
Ok now on to the Lemon Cream Cheese Frosting. It is to die for!! Love, love, love this recipe! We found this recipe on Naturebox.com and was meant for 30 cupcakes so we revised the recipe down for our 6 cupcakes we were making for our small dinner gathering.
Lemon Cream Cheese Frosting:
1/3 cup cold unsalted butter, cut into 1/2-inch pieces
1 cup powdered sugar
2 ounces cold low-fat cream cheese
1/2 teaspoons lemon zest
1/4 teaspoon vanilla extract
In a large bowl or Kitchen Aid, mix together on low speed and gradually increasing to medium, beat butter and powdered sugar until butter is broken into pea-size pieces and incorporated with the sugar, scraping bowl occasionally, about 3 minutes. Reduce speed to medium-low. Add cream cheese until all cream cheese is incorporated, scraping bowl occasionally. Add lemon zest and vanilla; increase speed to medium-high and beat until frosting is smooth, about 30 seconds.
Using a piping bag fitted with a large star tip, top cupcakes with frosting. If frosting is too thick to pipe, let stand at room temperature 10 minutes before piping or we added a bit of lemon juice to the ingredients (why not?). Decorate each cupcake with one single blueberry, wrap with Bella Cupcake Couture wrappers and Pink Paper Straws.
